This is one of the more well-known restaurants in Puglia, but it’s definitely worth a visit, especially in the low season when you can truly enjoy its excellent pastas. Founded in 1983, the restaurant is set in two unique spaces carved into the ancient rock of Ostuni. For the full experience, ask for a table in the grotto. We went in October, when the town is much quieter, and it felt so cosy. In summer, we passed by and saw it completely packed, so timing makes all the difference.
